A santoku is the modern workhorse in a Japanese home kitchen. The design of santoku appeared after the time of WWII, once common Japanese were more introduced to Western style food, mainly meat. Before WWII a common Japanese person was not familiar with consuming meat regularly, as the diet mostly consisted of fish and vegetable dishes. New diets have called for a new knife type - the santoku was born.
The word "santoku" can be translated as "3 uses or virtues". This knife is equally good at handling meat, fish and vegetables. Today every single home in Japan has a santoku knife in their kitchen. A santoku knife can be very efficiently used both in a home kitchen and in professional kitchen environment.

Enjin No Takumi knives are made in the city of Tsubamesanjo, located in Niigata prefecture, on the North side of Japan. Tubamesanjo area has a long tradition of a wide range of Japanese crafts, including knife manufacturing. Knives from Tsubamesanjo are famous for their high quality. Enjin No Takumi is mostly focusing on producing Damascus patterned knives. The knives themselves are manufactured by Fujitora Corporation, who are famous for making Tojiro knives.
Knives from Enjin No Takumi Damascus series are manufactured in 33 layers of highest quality stainless steel. World famous Japanese VG-10 high carbon stainless steel is used as core steel. VG-10 core steel is sandwiched between 16 layers of Japanese SUS-304 stainless steel on each side of the blade. The stainless steel protects the high carbon stainless steel core and also creates the elegant patterns that Damascus blades are internationally famous for.
Japanese VG-10 high carbon stainless steel is sometimes called "VG-10 super steel" and is world famous for its incredible edge retention - an ability to hold a sharp edge for a long period time. This knife has a handle made in high quality POM and it comes together with a small cutting board made in Paulownia natural wood. The cutting board is extremely light and is a perfect companion to your Enjin No Takumi santoku!
This knife is sold together with a custom made 當 Ataru saya. This saya is made in natural wood. The wood was strengthened with a special solution and because of our special strengthening method the saya is made to be very strong and durable. All 當 Ataru saya are made to have good resistance to water related damage. Every 當 Ataru saya is 100% handmade in Finland, according to the traditional Japanese woodworking methods.
